Every 4 to 5 years we are blessed with a crop of this decadent fruit. The reason for the inability to have this happen yearly is due to how sensitive the blossoms are. The trees produce a beautiful blossom in the early spring and if we receive a hard frost after it will kill the fruit. So when we get them we celebrate and do the best we can to harvest and preserve them.
We had an abundant year so much so that we realized next time we have a fantastic production year we will hire an army to help us. We attempted many ways in which to preserve them and found our specialty was in dehydrating them. Our guests loved being able to partake in our fruit funnels and basic dehydrated chips. Not to mention the fresh fruit that was available straight off the tree. We were so fortunate because the season lasted for 2 months giving us time to pick and prepare.
